One Pan Chinese Savory Pancake

It's been a while since I last shared a recipe, and I understand the challenges of meal planning in today's world of rising inflation, especially as a busy urban parent. While trying to find a way to prepare affordable, nourishing, and time-efficient meals that also support our family's vitality, a cherished memory of a traditional dish from my mom's hometown - Savory Oyster Pancake came to mind.

As I rummaged through what were in our fridge and pantry, I found some dried sliced shiitake mushrooms and thought this little guys combined with onion could give a great umami punch.
當我在雪櫃和儲物櫃時翻找食材時,發現一些乾香菇片,於是想到這些小小的香菇如果配上洋蔥,一定能帶來濃厚的鮮味層次。

Voila! Here’s my version of one pan (ok, I used wok) Chinese savory pancake.

Shiitake Mushroom 香菇

TCM Nutrition: Considered to have a balanced nature and are associated with Stomach meridian channel. They are known for benefiting the Kidney and Liver systems, nourishing Stomach, promoting Qi circulation in order to increase vitality.
中醫營養觀: 性平,入胃經,有益腎肝、健胃、行氣、提升元氣之功效。
Western Nutrition:
Shiitake mushrooms are low in calories, high in fiber, and a good source of vitamins, especially vitamin D and B-vitamins. They are also rich in minerals, such as potassium, selenium, and contain antioxidants that support immune health. When selenium meets vitamin E, it’d create antioxidants in the body.
西方營養觀: 香菇低卡高纖,富含維他命D與多種B族維他命,亦含鉀、硒等礦物質,並具抗氧化成分,有助免疫力;硒與維他命E同時存在時,能在體內產生抗氧化效應。

Caution: Please be cautious for those with eczema or gout, or who has excessive dampness in the body
注意: 濕氣較重、患有濕疹或痛風人士需謹慎食用。

Cabbage 椰菜(包心菜)

TCM Nutrition: Cabbage is considered a balanced nature food in TCM, associated with Stomach and Kidney meridian channels. It has the functions of nourishing the Kidneys, clearing damp-heat, dispersing blockages, and relieving pain. It is also effective in treating conditions such as damp-heat jaundice, digestive tract ulcers, and joint soreness.
中醫營養觀: 性平,入胃、腎經,能補腎、清濕熱、疏散阻滯、緩解疼痛,並常用於濕熱黃疸、腸胃潰瘍、關節酸痛等症。
Western Nutrition:
Cabbage is low in calories and an excellent source of dietary fiber, vitamins (especially vitamin K and C), and minerals. It's known for its antioxidant properties and potential for supporting digestive health.
西方營養觀: 椰菜低卡路里、富含膳食纖維與維他命K、C等,具抗氧化能力,有助消化健康。

Onion 洋蔥

TCM Nutrition: Onions have a warming nature, associated with the Metal element. It has the functions of invigorating the spleen, resolving phlegm, promoting fetal safety, killing parasites, dispersing wind-cold, tonifying the spleen, moistening the intestines, and promoting wound healing
中醫營養觀: 性溫,屬金,能健脾、化痰、安胎、殺蟲、散風寒、潤腸、促進癒合等。
Western Nutrition:
Onions are a good source of vitamins C and B6, as well as dietary fiber. They also contain antioxidants and have potential anti-inflammatory and cardiovascular benefits.
西方營養觀: 洋蔥含維他命C、B6與膳食纖維,具抗氧化、抗發炎及心血管保護潛力。

Egg 雞蛋(鴨蛋)

TCM Nutrition: We choose duck eggs instead of chicken egg due to allergy. They have a cold nature and are associated with the Water element in TCM. They are considered a Qi tonic, nourishing Kidney systems, the essence and supporting overall health.
中醫營養觀: 因對雞蛋過敏關係,所以我們選用鴨蛋。鴨蛋性寒,屬水,能補氣、養腎、益精,助於整體健康。
Western Nutrition:
Duck eggs are a rich source of high-quality protein, providing essential amino acids. They are also rich in various vitamins and minerals, including vitamin B12, vitamin A, vitamin D, vitamin E, and minerals like selenium and choline. Eggs are known for their role in promoting muscle growth and overall nutrition.
西方營養觀: 鴨蛋含高品質蛋白質、維他命B12、A、D、E,以及硒、膽鹼等礦物質,有助肌肉成長與全面營養。

Sesame Oil 麻油

TCM Nutrition: Sesame oil has a netural to warming nature, It is believed to moisturize and lubricate the intestines and nourish the liver and kidneys. It also is considered beneficial for those recovering from illnesses or with weak constitutions.
中醫營養觀: 性平至微溫,可潤腸、養肝腎,對病後恢復或體質虛弱者有益。
Western Nutrition:
Sesame oil is a source of healthy fats, primarily monounsaturated and polyunsaturated fats. It contains vitamin E and is known for its potential heart-healthy benefits, including reducing inflammation.
西方營養觀: 富含健康脂肪與維他命E,具抗炎和心血管保護作用。

Black Sesame 黑芝麻

TCM Nutrition: Black sesame seeds are considered warming nature, nourish the liver and kidneys and promote healthy hair and skin. Ancient Chinese believed that black sesame oil was a nourishing remedy that could moisten the spleen and blood, promoting longevity. This suggests that sesame oil has the potential to nourish qi and blood, thereby helping to maintain a youthful appearance
中醫營養觀: 性溫,能補肝腎、益髮膚。古人認為黑芝麻能潤脾養血、延年益壽,亦能養氣血,有助維持青春狀態。
Western Nutrition:

White Pepper 白胡椒

TCM Nutrition: White pepper has a warming nature and is linked to the Metal element. It's believed to aid digestion and dispel coldness. White pepper is more often used in traditional Chinese cuisine than black pepper
中醫營養觀: 性溫,屬金,有助消化、散寒,比黑胡椒更常見於傳統中菜。

White pepper is a mild spice that can enhance flavor in dishes. It may have potential digestive benefits, including promoting appetite and aiding digestion.
西方營養觀: 白胡椒味道較溫和,能提升菜式風味,並可能促進食慾與助消化。

INGREDIENTS

  • 1 cup (150g) Gluten-free all purpose flour
    1杯(150克)無麩質麵粉
  • ¾ cup Water
    ¾杯 清水
  • 2 large Eggs
    2 隻 大蛋
  • 1 sliced Onion
    1 個 洋蔥(切片)
  • 4 oz (28 g) sliced Shiitake Mushroom (please soak with warm water for few hours if using dried version)

  • 1/2 oz (14 g) Toasted sesame oil
    1/2安士(14克)麻油
  • 1 tsp Coconut Amino (or soy sauce)
    1茶匙 椰子胺油(或豉油)
  • Pinch White Pepper
    少許 白胡椒
  • Pinch Black Sesame
    少許 黑芝麻

INSTRUCTION
做法

  1. In a mixing bowl, whisk to combine flour, water, eggs, sesame oil, white pepper, and coconut amino (or soy sauce)
    在大碗中將麵粉、水、蛋、麻油、白胡椒和椰子胺油(或豉油)拌勻。
  2. Heat oil in a pan over medium-high heat
    中高火加熱平底鍋並下油。
  3. Add onion, cabbage, and shiitake mushrooms in the pan, stir fry till fragrance
    加入洋蔥、椰菜和香菇,炒至散發香氣。
  4. Using a spatula, press down the vegetables
    用鍋鏟壓實蔬菜。
  5. Pour the batter on the vegetables in the pan, use the spatula press down and even out the batter
    將麵糊倒在蔬菜上,再以鍋鏟輕壓並抹平。
  6. Continue pan fry until golden brown, 4–5 minutes
    繼續煎4–5分鐘至金黃。
  7. Turn and pan fry the other side for another 5 minutes
    翻面,再煎約5分鐘。
  8. Sprinkle black sesame on top and served hot
    灑上黑芝麻,趁熱享用。
